After adding this tadka to the batter, just before cooking, eno is added and mixed immediately, due to which the handvo will rise well. Grease a thick bottomed kadhai or pan, pour the batter and cook on low flame for 12–15 minutes. When the bottom surface becomes golden, turn the handvo and cook the other side also. If desired, it can also be baked in the oven.
